  • Heat oil in large skillet on medium heat. Add meat; cook 5 to 6 min. or until evenly browned, stirring occasionally. Spoon into slow cooker.
  • Mix barbecue sauce, chipotle peppers and adobo sauce; pour half over meat in slow cooker. Top with vegetables. Cover with lid. Cook on LOW 8 to 10 hours (or on HIGH 4 to 5 hours).
  • Stir in remaining barbecue sauce mixture.
