Spinach and Bacon Pasta Toss

  • Cook noodles as directed on package, omitting salt.
  • Meanwhile, heat dressing in large skillet on medium heat. Add chicken; cook and stir 5 to 7 min. or until done. Add tomatoes; cook 1 min., stirring occasionally.
  • Drain noodles, reserving 1/2 cup of the cooking water. Add noodles and reserved cooking water to chicken mixture in skillet; stir. Remove from heat. Add spinach, 1/2 cup cheese and bacon; mix lightly. Sprinkle with remaining cheese.

How to Clean Spinach

Spinach can hold a lot of dirt and must be thoroughly washed before using. To clean, fill a large bowl with water, then swish spinach around in water until most of the dirt comes off. Repeat process 2 or 3 times, using clean water each time, until no more dirt clings to the spinach. Rinse thoroughly under running water and remove hard stems. Spin dry in salad spinner and/or pat dry with paper towels. Use immediately or store in refrigerator up to 4 days.

Substitute

Prepare using any type of pasta, including whole wheat pasta.

Make it Easy

Substitute OSCAR MAYER CARVING BOARD Flame Grilled Chicken Breast Strips for the cut-up fresh chicken. Add to hot dressing in skillet; cook just until heated through, stirring occasionally. Stir in tomatoes; continue as directed.

Last time I made it I used Pappardelle pasta - superb! I also have passed this recipe on to 5 different people. I gave this recipe to my sister to try, and her husband loved it. He was so impressed that he had her make it for a school potluck (he is a high school teacher) and she was also asked for the recipe by quite a few parents. Looking forward to the reviews from the rest!

Rated 5 out of 5 by from Loved it! Loved it! I tweeked it a little to suit what I had on hand. Since I used leftover plain linguini noodles, there was no water to use. I also did not have cherry tomatoes. So I substituted a can of petite diced tomatoes and included the juice from the can. I also used 1/4 cup pre-cooked and crumbled bacon. The recipe did not require any additional seasoning. I will definitely make again.

I substituted the cherry tomatoes for a can of diced tomatoes well drained since it was all I had on hand, and instead of egg noodles I used a 1/2 pound (maybe a little more) spaghetti broken in thirds so it was easy to toss with everything. I also seasoned with Morton's Natures Seasons (which I put on EVERYTHING). It was absolutely delicious and my husband loved it too!

Does not taste low fat-low cal. at all, Awsome! I made it use Kraft Fat Free Zesty Italian dressing, 2% mozz.cheese, and whole wheat rotini pasta. I think this is one of the best recipes from this website yet!

Rated 4 out of 5 by from I didn't have any fresh spinach, so I used some frozen. I didn't have any fresh spinach, so I used some frozen. I put it into the pan right after the chicken was cooked. It actually worked out better, because my kids wouldn't touch spinach leaves, but they did each the spinach as it turned out (it blended in better with the rest of the ingredients). WONDERFUL!!

Rated 4 out of 5 by from My family loved this recipe. My family loved this recipe. I cut the noodles by about a third. It was good with linguine. I also added a little fresh parmesan cheese as well as the mozzarella. I added the spinach to each serving and not the whole dish, so it would not wilt and each diner could control how much they wanted.

This recipe has a wonderful flavor, but I recommend halving the recipe or using less noodles. I had difficulty stirring everything together, even in my largest mixing bowl. I created a pretty big mess while trying to prepare this dish, and the clean up time really isn't fun.

I used frozen spinach instead of fresh for this because my supermarket didn't carry fresh and it came out great. I also didn't add the water but added 1/4. extra dressing instead. My husband loved it and he has been very pick lately about me trying new recipes.
