  • Beat cream cheese, mayo and half the onions in medium bowl with mixer until blended. Add spinach; mix just until blended. Stir in cheese and peppers.
  • Refrigerate 1 hour.
  • Sprinkle with remaining onions.

Note

Rated 1 out of 5 by from i made this recipe and it turned out the complete opposite of the picture or what i expected. i made this recipe and it turned out the complete opposite of the picture or what i expected. the spinach seemed to soak up ALL of the cream cheese and mayo. i even added another block of cream cheese and it still wasnt creamy enough. i absolutely loved the idea of this recipe so if anyone has any thoughts or suggestions on how to improve this please let me know.

Rated 5 out of 5 by from This is the second time I made this recipe, and it was a hit once again. This is the second time I made this recipe, and it was a hit once again. I used regular mozzarella cheese instead of crumbles, I just grated it really fine. I also added a tsp of Italian seasonings and instead of using the roasted red peppers, I chopped up tomato in it. It was sooooo good! Everyone once again wanted the recipe!

Rated 5 out of 5 by from Amazing dip! Amazing dip!! I made this with colby-jack crumbles because I wanted to use them for another recipe. Instead of buying a jar of roastead bell peppers, I bought a fresh one and grilled it prior with another meal. I have been looking for a cold spinach dip for a while and this one is perfect! Can't wait to make it again!!

I couldn't find Italian Cheese Crumbles at the grocery store where I live, so the first couple times I made the dip, I just crumbled up various italian cheeses. The last time I made the dip I did use the Italian Cheese Crumbles, and that was definately the best version.

I used shredded mozzarella cheese with sun-dried tomatoes mixed in instead of the Crumbles (we don't have those here), and it turned out very well. One of my guests said he hates spinach, but he was scraping the bottom of the serving bowl for more!

Rated 5 out of 5 by from This recipe is the greatest. This recipe is the greatest. This is by far my favorite dip! Tastes great with crackers, chips or wheat thins. Even my husband (who hates spinach) will eat it up! Best to eat this in the summer, but I still make it in the winter to remind me of the summer days that are not too far away.

I thought when I was mixing this recipe up the night before my party that I wasn't going to like it. Boy I was WRONG! It was so yummy. It has a great flavor - it goes well with Ritz crackers, wheat thins or we even melted it on some chips. It was wonderful cold and great warm too!

Maybe the negative commenter should read the suggestion on the recipe of adding milk to thin out dip, not adding more thickness with more cream cheese.
