  • Heat oven to 375ºF.
  • Combine first 5 ingredients; stir in 1 cup mozzarella. Spread onto noodles, adding about 1/3 cup to each; roll up.
  • Mix sauce and crushed pepper; spread 1/2 cup onto bottom of 13x9-inch baking dish. Add lasagna rolls, seam sides down; cover with remaining sauce and mozzarella.
  • Bake 25 min. or until heated through.

Make Ahead

This delicious recipe can be assembled ahead of time. Refrigerate up to 8 hours. When ready to serve, bake, uncovered, in 375ºF oven, increasing the baking time to 35 to 40 min. or until lasagna rolls are heated through.

You need to make sure to get the sauce spread over all of the noodles otherwise they will dry out in the oven. I used ground beef instead of chorizo, next time will just leave the meat out and make it vegetarian. This was a great variation from a standard lasagna and its already portion sized! It looks very fancy in the pan.

Rated 5 out of 5 by from Delicious! Delicious! I have never made any sort of lasagna dish... I alwasy thought it would take a lot of time and would be difficult..Not this recipie! It was easy and fun. On a side note, I used Hot Jimmy Dean sausage instead of chorizo to cut down on the greasyness. It was a winner:~)
