  • Heat oven to 350°F.
  • Mix eggs, cottage cheese, spinach, 2 cups mozzarella and 1/4 cup Parmesan.
  • Layer 1 cup pasta sauce, 3 lasagna noodles and half the cottage cheese mixture in 13x9-inch baking dish. Repeat layers. Top with remaining noodles, sauce and cheeses.
  • Bake 45 min. or until heated through. Let stand 10 min. before serving.

Serving Suggestion

Serve with a crisp, mixed green salad, whole wheat roll and fresh fruit for dessert.

Since I don't like ricotta cheese, I have used this egg and cottage cheese version many times before and I like it even better than a bechemel sauce. However, I never boil my noodles before hand. I fix it the night before, but you can do the same just before you bake same. Just omit the cheese toping for later, then pour 1 cup of water over top. Cover with foil. If you are baking later, store in fridge. To cook right away, keep covered and bake for about 35 minutes or until bubbling. Remove foil, sprinkle cheese over top - I like extra cheese, so I sprinkle Parmesan cheese also. Return to oven for another 10 to 15 minutes. Allow to rest 10 minutes before slicing.

Rated 5 out of 5 by from well tonight I made the spinach lasagna,I added one half pound ground beef and used 16oz spinach and... well tonight I made the spinach lasagna,I added one half pound ground beef and used 16oz spinach and whole box of lasagna noodles.after I made the lasagna I had enough ingredients left over for a fat 2 layer lasagna that I put in the freezer for one of those nights that are hectic or whatever. Also When you are draining the spinach make sure you squeeze out excess water.believe me you will be there a good 2 or 3 minutes squeezing but you will be glad you did.My hubby loved this so much he had 4 pieces of it! He is taking 2 more pieces in his lunch ! We are Italian so we can pack some Lasagna in! our son was ok with it but he still didnt like the thought of spinach-he left some on his plate. he is 10 years old-I could tell he would eat it again but not thrilled.

So easy to make, I tried to use the healthiest ingredients and it is a healthy recipe.. cottage cheese, spinach, cheese. I also added a small clove of garlic, because its healthy, we don't eat enough of it and its easy to hide in a meal like this. I had great response from adults, they even asked for the recipe, but I'm sorry it didn't go over as well with my children. Nevertheless, I'll be making it again and freeze leftovers for busy days, when there is no time to cook, but time to heat up. Thank you, Audrey

I wasn't sure at first because I've never made Lasagna with cottage cheese, but it was so moist and just wonderful. I made it for three very picky eaters (My Boyfriend and his two sons). They ate it up. I got a 3 and a 4 1/2-year-old to eat spinach, a green vegetable. I made this recipe again, but added extra lean ground turkey. I let the ground turkey cool and then added it to the spinach/cottage cheese mixture. I was just as moist and wonderful.

Rated 5 out of 5 by from LOVE IT! Have made this recipe many times and still love it! I do not cook my noodles first. I got a recipe years ago from a spaghetti sauce jar...assemble this lasagna as per recipe except with dry noodles. I get the generic or whatever is on sale. At the end pour 1/2 cup of water around the assembled lasagna. Cover with foil and bake for 50-55 minutes covered. Then take off foil and cook for the additional 5-10 minutes uncovered. The noodles cook in the oven! Or buy no boil noodles.

When giving all the food facts like calories, etc., are you considering the regular ingredients or the reduced fat ingredients? I like the idea you give these facts especially if you're watching calories,cholesterol,sodium,carbs and fat intake; it helps the cook as well as the conscientious eater.This recipe, by the way, is excellent; I added a lot of herbs to it because I'm into healthy eating and herbs are part of my lifestyle now. Thanks for all the great recipes.

Rated 4 out of 5 by from i wanted to change my rating from a 2 to a 4 because my main complaint was that the lasagne was... i wanted to change my rating from a 2 to a 4 because my main complaint was that the lasagne was runny. well, after it cooled COMPLETELY (hours), it firmed up a lot. the shredded cheeses and pasta mustve soaked up all the liquid. my other complaint was that it was bland. but as it cooled it tasted better(when it was hot, the cheese was too runny). even though it made a lot of dirty dishes, it was fun to make, and its A LOT to eat! so all in all it was worth it.

I've also finally figured the best way to drain the spinach well (so the lasagna isn't runny). This dish is AMAZING. Everyone raves and goes back for seconds. I've had soooo many people asking me for "my" recipe. And trust, freezing and/or reheating later...still delish! Now that I know the recipe by heart I can whip this together in 10 mins and then enjoy a glass of wine while I lounge and wait :)
