  • Bring tomatoes, pasta and water to boil in large saucepan; stir. Cover; simmer on medium-low heat 10 min. or just until pasta is tender.
  • Add half the spinach; simmer, covered, 2 min. or just until wilted. Stir. Repeat with remaining spinach.
  • Serve topped with cheese.

Special Extra

For a spicier dish, add 1/4 tsp. crushed red pepper or hot pepper sauce to uncooked pasta mixture in saucepan before cooking as directed.

I made this for my family last night and everyone was skeptical as they watched my throw it together. I read the reviews before hand and heeded their suggestions. I increased the water to 2 cups and added the suggested spices (Ital seasoning and garlic salt (1/2 tsp each) and black pepper). I also had to increase the cooking time to make sure the pasta was tender. I ended up decreasing the spinach in half as I think 9 cups would be too much. I served this with garlic bread and a ceasar salad, YUM! It turned out great since I added a little more cheese and stirred it in so it got to be a cheesy, tomato sauce. I will definitely make this again.

Rated 1 out of 5 by from As per directions is horrible. As per directions is horrible. Not enough water, need to make it 2c otherwise you get starchy stuck noodles. Probably be better to cook the noodles separately. Needs extra seasoning- garlic and spices otherwise bland. Also by the time you cook down the last of the spinach the rest has cooked down so small that there is no way you would have enough to feed 6 people each 1c-- unless you cook the spinach separately and put each batch on a plate/bowl just after it's wilted and then quickly toss it back in with the pasta and cheese in the very end. Other recipes are much better than this.

Rated 5 out of 5 by from I made this last night. I made this last night. Added one can of water to tomatoes in pan. Also added some garlic powder, Italian seasoning, red pepper flakes, salt, pepper and a can of cannellini beans which I had drained and rinsed. Topped with some mozarella and parmesan cheese. It was juicy and delicious - excellent flavor. My husband asked me to "make it often". We thought it may also be good with grilled chicken chunks or some Italian sausage. It was definitely a hit at our house!!

Rated 4 out of 5 by from When I made this recipe I made the pasta separately. When I made this recipe I made the pasta separately. I started with about 2 tsp. olive oil and a tbsp of minced garlic. Then I put 2 cans diced tomatoes in the pan, and put in spinach, half a bag at a time. Finally, when pasta was done, spooned tomato-spinach mixture over it to serve. The family liked it, but felt it could use some additional seasoning, such as italian or sweet basil. We will definately do this one again.

I work 12-hour shifts, and this will be a great addition to the meals that I prepare and take to work with me, or for those times I don't want to spend much time in the kitchen. I didn't have penne pasta on hand, so I used spiral-colored pasta instead. This dish presents beautifully, and with only one pot to wash, I really hit the jackpot.

We did find that it needed some seasoning, perhaps some minced garlic which gives awesome flavor and maybe Italian seasonings...there was some left over so he took it to work for lunch. A co-worker saw how colorful it was,what it was & also for the recipe! There you go! Just needs a bit of zip!

Rated 1 out of 5 by from This was horrible! This was horrible! Way too much spinach, the pasta was very starchy, no flavor except spinach. None of us wanted to eat it. If I made this again, I would cook the pasta separately, add maybe some italian sausage or kielbasa, onions, mushrooms and garlic. Definitely reduce the spinach by at least half and I love spinach! This was totally disgusting!

I tried this receipe on Memorial day w/e and used 2 cups of water, like some of the other cooks recommended. It was great. I cooked it tonight and added onion an garlic powder to give it a little more flavor. When it was done cooking, I added a small can of sliced black olives. Voila!! It was AWESOME!!
