  • Line 9-inch pie plate with crust; flute edge.
  • Toss cheese with flour in medium bowl. Add remaining ingredients. Pour into crust.
  • Bake 1 hour or until knife inserted in center comes out clean.

Substitute

Substitute KRAFT Shredded Swiss Cheese for the Cheddar.

Special Extra

Cover edge of pie crust with strip of foil for the last 15 min. of the baking time to prevent it from browning too much.

I've kitbashed it three different ways now, in addition to the original recipe, and it's been fantastic every time. The latest version: instead of spinach, I sauteed with bacon 1 each carrot, tomato, smallish zucchini and yellow squash, and half a red onion until soft; subbed swiss and parmesan cheeses for cheddar, and baked the quiche in a deep dish pan (very important). I've also used broccoli in the veggie mix and ham instead of bacon. It's versatile and not too heavy with only 2 eggs. Works fine with 1% milk, doesn't need cream like some other quiche recipes.

Rated 1 out of 5 by from I was so excited to make this recipe and it turned out horrible. I was so excited to make this recipe and it turned out horrible. I followed the recipe exactly also. I had the oven set at the right temperature as noted but the crust edge started to almost burn before the actual quiche was finished cooking so I had to go ahead and take it out. We tried to eat it but the spinich was overpowering - way too much. Two eggs was not enough either - I should have put at least 3 or 4. I wasted money buying the ingredients for this and won't be making it again. The entire quiche went in the trash. I was so disappointed.

Rated 5 out of 5 by from Wow! Wow! I have my own special quiche recipe which was handed down to me by my father who was a chef, but this recipe is top of the class. I used fresh spinach instead of frozen. Method: wash and trim 8 cups of spinach leaves. Steam them in a large covered saucepan for about 2 minutes until wilted, stirring as needed. (Do not add any water as the droplets on the spinach will be sufficent to cook them). Drain well and finely chop. I also used ham instead of bacon. Delicious.

I think the hardest part was figuring out if it was done, because there was alot of liquid in it (ham and cheese oil?) So the knife never came *****lean, but the top browned. I even tried to cut down the oven time by microwaving it for 5 minutes first, but I ended up cooking it the same since I couldn't tell when it was done.

Rated 5 out of 5 by from This is fast, easy and ooohh so good! This is fast, easy and ooohh so good! I love this recipe because I can do a lot with it. In place of the cheddar cheese, try Mexican mix or Cheddar, Colby & Monterey Jack mix or the Italian mix. I've used them all with great success. In place of spinach try other frozen vegetables like broccoli. In place of bacon try 6 oz can of chicken or tuna. Dress up the original recipe at Christmas by adding diced red & green pepper. Have fun and enjoy good eats!!

I used a lot more bacon than the recipe called for - I do think next time I will cut back on that but it was still so incredibly yummy. I would like to try this with Swiss cheese instead of the cheddar. The best thing is that I keep brainstorming great ways of how to make this a lean quiche - it will be so easy - egg substitute, turkey bacon, fat free cheese, etc! Can't wait to make this again!

Rated 4 out of 5 by from Yummy! Yummy! This is the 1st quiche I've ever made & it was great! (My husband is a picky eater & he ate almost 1/2 of the pie!) The cheese on top burned so I just kinda peeled off the top layer. I used fresh spinach & omitted the bacon. If using fresh spinach, I'd recommend a "deep dish" pie crust as I used a regular one and I think that's what caused some egg & cheese to run over. Thanks!
