Spring Stir-Fry in Peanut Sauce

  • Mix dressing, peanut butter, soy sauce and crushed red pepper; set aside. Heat 2 tsp. of the oil in large nonstick skillet on medium-high heat. Add chicken; cook and stir 5 to 8 min. or until chicken is cooked through. Transfer chicken to large serving bowl; cover to keep warm.
  • Heat remaining 1 tsp. oil in same skillet. Add broccoli and bell peppers; cook and stir 5 min. or until vegetables are crisp-tender.
  • Add pasta, vegetables and dressing mixture to chicken; mix lightly. If desired, gradually stir in enough of the reserved pasta cooking water until sauce is of desired consistency. Sprinkle with the onions.

Special Extra

For a zestier peanut sauce, add 1 Tbsp. lime juice to the sauce ingredients.

Rated 5 out of 5 by from Our favorite recipe by far! Our favorite recipe by far! I use chicken w/ red pepper,broccoli and mushrooms. also I double..sometimes triple the sauce! I do NOT like fresh vegtables at all so if you or your children are picky about vegtables give this a try! Also makes a wonderful vegetarian option. I just cant express how much I love this recipe. I love the flavor so much I cant stop eating it until Im stuffed!

Rated 4 out of 5 by from This is a really easy and exciting meal. This is a really easy and exciting meal. I used whole wheat rotini instead of the fettucine. For the veggies I used broccoli, yellow and green peppers. I only used one tablespoon of peanut butter in the sauce. This helped the peanut butter to not overtake the flavor of the sauce. Great, easy, and different. Worth a try.

The noodles were very hard to incorporate and it ended up looking pink. If I were to make it again I would probably use egg noodles or rotini. I used a larger selection of veggies too..snow peas, carrotts, red & green peppers and broccoli.

Who ever thought Peanut butter Soy Sauce and crushed red pepper was good together needs new taste buds...... DO NOT make this Recipe. Luckily I had some other sauce of my own to put over it.

Simple preparation, comes together easily. We used a frozen stir-fry mix instead of fresh vegetables to make life easier. We will definitely make this again!

I used a whole pkg of frozen stir-fry vegetables and substituted spaghetti for the fettuccine. Mixed in a handful of unsalted peanuts before serving. My husband loved this. Will make again.

Rated 5 out of 5 by from YUMMY! YUMMY!!!! it was so good! my husband and i love the "thai" peanut satay sauce and this was very similiar! i only had spaghetti noodles at home but everything else i kept the same (maybe a bit extra peanut butter), but is was great. we loved it!!!!
