  • Sprinkle 1 env. gelatine over 1/4 cup water in medium bowl; let stand 5 min. or until softened. Meanwhile, combine wafer crumbs, butter and 2 Tbsp. sugar; spoon into 12 (4-oz.) jars with lids. Press crumb mixture firmly onto bottoms of jars.
  • Bring remaining water and 1/2 cup of the remaining sugar to boil in saucepan. Pour over softened gelatine; stir until completely dissolved.
  • Beat cream cheese and vanilla in medium bowl with mixer until blended. Gradually add dissolved gelatine mixture, mixing well after each addition. Spoon evenly over crusts.
  • Refrigerate 15 min. Meanwhile, sprinkle remaining gelatine over 1/4 cup lemon-lime soda in separate medium bowl; let stand 5 min.or until softened. Bring 1 cup of the remaining lemon-lime soda and remaining sugar to boil in saucepan. Pour over softened gelatine; stir until completely dissolved. Stir in remaining soda; cool slightly.
  • Pour lemon-lime soda mixture over cheesecake layers in jars. Refrigerate 1-1/2 hours or until firm.
  • Spoon berries evenly over desserts, gently pressing berries into tops of desserts with back of spoon to secure. Cover jars with lids. Refrigerate 1 hour or until firm.
