  • Heat oil in large nonstick skillet on medium heat. Add chicken; cook 5 min. on each side or until lightly browned on both sides. Remove chicken from skillet; cover to keep warm.
  • Add broth to skillet. Stir in stuffing mix just to moisten. Top with vegetables and chicken; cover. Reduce heat to low; cook 10 min. or until chicken is cooked through and vegetables are heated through.

Storage Know-How

If you use boneless skinless chicken breasts often in recipes, package them for the freezer in recipe-size portions. This lets you thaw only the amount you need.

Ok, this is not a supertasty but I was looking for a recipe that would feed my family of four without going to the grocery store. I searched on chicken cutlets, which is what I wanted to use, and the rest of the ingredients were in the pantry. By 5:30 we were cleaning up dinner. It's an easy, quick, filling meal. It's not going to be in my regular rotation, but it will work in a pinch.

The only advantage is this is all in one pot. Made it a second time and did veggies separately and threw a can of cream of chick soup on it for gravy. I really like to have a nice presentation with my food, and this was sort of boring.
