  • Heat oil in large nonstick skillet on medium heat. Add chicken; cook 5 min. on each side or until lightly browned on both sides. Remove chicken from skillet; cover to keep warm.
  • Add broth to skillet. Stir in stuffing mix just to moisten. Top with vegetables and chicken; cover. Reduce heat to low; cook 10 min. or until chicken is cooked through and vegetables are heated through.
