  • Heat oven to 400ºF.
  • Add hot water to stuffing mix; stir just until moistened.
  • Place chicken in 13x9-inch baking dish. Mix juice, sugar and butter until blended; pour over chicken. Top with stuffing.
  • Bake 30 min. or until chicken is done (165ºF).

Substitute

Substitute honey for the brown sugar.

The chicken was very tender and juicy, but the orange juice was just a bit much for my husband. He is a little shy about meat and fruit together anyway, but the flavor was so strong he couldn't stomach it, especially the stuffing which held the flavor better. I was able to finish it, but after having the leftovers the next day for lunch I had had enough, it was just too orange. It might be better with a little orange juice and a little apple cider or chicken broth but it's VERY strong citrus.

Rated 4 out of 5 by from My husband (who usually does not like to try new things) and kids liked the recipe. My husband (who usually does not like to try new things) and kids liked the recipe. I thought the stuffing was a little runny - maybe too much juice to absorb. Next time, I may try marinating the chicken in the OJ and then using less OJ for the actual baking time. By the way - my chicken never gets done the the time alotted in your recipes. I cut the breasts in half length-wise and baked it for the time called for in the recipe and the chicken was still slightly pink.

Fast and easy to prepare, it's something different to serve, it's very palate pleasing and....here's the important one.....the kids will eat it! I got compliments on dinner from EVERY member of the family with this dish! I would definitely recommend trying it yourself! I sliced a peeled blood orange and place the rounds on the chicken before spooning the stuffing on top. Adds to the flavour and the visual appeal.

I actually rub/marinate the chicken with chili lime seasoning for 10 mins, then cover with a mix of orange juice, a whole lemon squeezed and a tbsp of vinegar (i used cranberry flavored vinegar) and let that sit another 20-25 mins. When I bake it, I add another squeezed lemon into the orange juice with the brown sugar and add a tbsp of garlic. Don't use the marinade, toss that and use fresh juices for the baking. Delish!

Rated 5 out of 5 by from I made this on the 3-31-07. I made this on the 3-31-07. Quick and so simple. I just loved the flavor of the orange juice in the stuffing mix. That's a good mixture. So next we are going to try it with pork chops and pork flavor Stove Top Stuffing. Also try along with the meals jellied cranberry's as a tart side dish. With pork chops or pork tenderloin we add a side of applesauce. It compliments the meats. Thanks,

Chicken was moist and they liked the way the stuffing was a little crispy on top. I added chopped celery to the stuffing mix. If I had more time I would have added some fresh chopped carrots too. (My husband suggested raisins and/or sliced almonds.) It was very flavorful for such low fat and salt. Thank-you!

Rated 3 out of 5 by from This wasn't quite as good as I would have hoped. This wasn't quite as good as I would have hoped. The chicken was moist, the stuffing actually on the chicken was good, but the stuffing that ran off to the outsides of the pan was too soggy and sweet. I don't think I'll make it again, but if I did I'd probably cut down on the OJ or place the stuffing more carefully onto the chicken as to avoid it falling into the juice.
