Rated 4 out of 5 by from easy to make and a pleasant change from monotonous lettuce/tomato salads. easy to make and a pleasant change from monotonous lettuce/tomato salads. i let the fruits sit in the vinegrette overnight and just added them to the bed of lettuce at the following day's BBQ. it worked nicely because the fruit and vinegrette flavors marinated together and it also worked as a good way to store the leftovers. the BBQ side dish became a 1-step lunch salad at work later in the week.

I added a salad bag of mixed greens along with the spinach. Watch out for the cilantro. Cilantro is very strong and can over power this great salad.
