  • Place strawberries in blender; blend until pureed. Set aside. Stir boiling water into dry gelatin mix in medium bowl until dissolved. Add strawberry puree; mix well. Refrigerate 45 min. or until slightly thickened.
  • Add yogurt; beat with electric mixer on low speed until light and fluffy. Line bottom and side of 9-inch pie plate with wafers. Fill with the gelatin mixture.
  • Refrigerate 2 hours or until set. Top with the whipped topping just before serving. Store leftovers in refrigerator.

Selecting & Storing Fresh Berries

Look for firm, plump berries that are full colored for their variety. Fresh berries are perishable and do not ripen after picking, so store in the refrigerator for no longer than 2 days. Rinse with cool water just before using and remove the hulls, if necessary. Berries in season have more flavor and are typically lower in cost than their out-of-season counterparts. Enjoy summer's best all year long by freezing berries at the height of their season. Then, thaw and use as desired.

Ratings & Reviews

Rated 4 out of 5 by from Look this filling - but did not try to mess with the wafers. Look this filling - but did not try to mess with the wafers. It works perfectly well on a graham cracker crust...although I did not re-calc the calories. I like it best with the additional sweetened frozen strawberries to the filling.

I omitted the vanilla waffers, sprayed the dish with Pam and following the rest of the recipe. It is delicious! In addition, without the waffers, I believe the recipe is now less than 80 calories a serving.

Rated 5 out of 5 by from We really liked this recipe. We really liked this recipe. However, make sure the jell-o strawberry mixture is thick or the vanilla wafers will float and the presentation won't be very attractive. Our family liked the moist wafers.

Rated 2 out of 5 by from The crust is very difficult to work with. The crust is very difficult to work with. I would prefer a graham cracker crust. That is how I might try it again. The cookies get very soggy.
