  • Stir boiling water into dry gelatin mix in large bowl at least 2 min. until completely dissolved. Add enough ice cubes to cold water to measure 1 cup. Add to gelatin; stir until ice is completely melted. Stir in lime zest and juice.
  • Add whipped topping; stir with wire whisk until well blended. Stir in strawberries. Refrigerate 1 hour or until mixture is thick and will mound. Spoon into crust.
  • Refrigerate at least 4 hours or overnight. Store any leftovers in refrigerator.

Size Wise

This pie is great for a get together since it tastes great and serves 8.

Special Extra

Garnish with thin lime wedges and/or additional grated lime peel just before serving.

    Light and wonderful. Made it exactly as set forth, but added a few more strawberries. I also put my strawberries in my food chopper and pulsed it a could of times and it was wonderful I garnished with whipped cream and fresh strawberries when I served. Great dessert when you have a heavy dinner.

    This pie is so light and refreshing with the lime zest/juice and fresh stawberries. I made it with sugar-free Cool Whip and sugar-free JELL-O and it was so delicious. Definitely plan to make this again - this recipe is a keeper.
