I tried this recipe, only I made it as a mousse rather than a pie (I just omitted the pie crust and spooned the filling into dessert dishes.) It was VERY light, but not particularly sweet. I "lightened up" the calories by using sugar-free Jell-o and fat free Cool Whip, and the consistency was just fine. Good option for diabetics. You could probably sweeten it up a bit by adding some Splenda.
Things I would do differently next time: add WAY more strawberries (maybe triple the amount called for) and cut back on the lime juice to only 1 Tbsp. of juice, and no lime zest!
