These cookie balls have built-in portion control so you can easily enjoy one ball when you're craving a sweet treat.
Crushing vanilla wafers is a cinch with a rolling pin and resealable plastic bag. Just place the wafers in the bag, close bag, then roll rolling pin over wafers until finely crushed. Or, use your food processor or blender to process the wafers until finely crushed.
To easily coat the cookie balls with the melted chocolate, add cookie balls, in batches, to bowl of melted chocolate. Use 2 forks to roll balls in chocolate until evenly coated. Remove balls with forks, letting excess chocolate drip back into bowl. Return dipped cookie balls to prepared pan; let stand until chocolate coating is firm.
Break the chocolate into small pieces; place in microwaveable bowl. Microwave on HIGH 2 min. or until chocolate is completely melted, stirring every 30 sec.
Store in tightly covered container in refrigerator.
