What You Need

pkg. (3 oz.) ladyfingers, split

pt. (2 cups) strawberries, divided

1-3/4

cups boiling water

pkg. (8-serving size) or 2 pkg. (4-serving size each) JELL-O Strawberry Flavor Sugar Free Gelatin

cups ice cubes

tub (8 oz.) COOL WHIP LITE Whipped Topping or COOL WHIP FREE Whipped Topping, thawed

Make It

TRIM 3/4 inch from ends of ladyfingers; place ends on bottom of 9-inch springform pan. Stand remaining ladyfingers around side of pan, with cut sides facing in. Reserve 2 strawberries for garnish; mash remaining strawberries.

STIR boiling water into gelatin in large bowl at least 2 min. until completely dissolved. Add ice cubes; stir until melted. Add COOL WHIP and mashed strawberries; stir gently with wire whisk until well blended. Refrigerate 10 min. or until mixture is very thick and will mound. Spoon into prepared pan.

REFRIGERATE 3 hours or until firm. Remove side of pan. Top with reserved strawberries.

How to Prepare in 9-inch Cake Pan

Line 9-inch round cake pan with foil, with ends of foil extending over edge of pan. Prepare dessert as directed. To remove dessert from pan, carefully lift out of pan onto serving plate using foil handles. Peel away and discard foil.

How to Mash Strawberries

Crush strawberries with a potato masher. Or, process, using pulsing action, in a food processor until finely chopped.

It was good, however you need at least 2 to 3 pakages of lady fingers.

I made the one from the magazine, with graham cracker crust...for a birthday party for my grown up kids.........lets just say......the last piece was fought for......will make this again and again

What is the bottom half of the picture? Is it short cake. Recipe don"t mention it.

But, I would not use as much liquid. Very wet (lady fingers). Perhaps I pulsed the strawberries too long not sure. Otherwise, it was delicious and we all enjoyed it so much that my guest requested a copy.

This was marvelous, everyone enjoyed it from the low carb group, the diabetic group and the people who can eat anything they want group. It was a definite hit.
