  • Cut cake horizontally into 3 layers. Place 1 cake layer on serving plate.
  • Slice 2 cups of the strawberries; set aside. Crush remaining strawberries. Stir crushed strawberries and milk into 1-1/2 cups of the whipped topping in large bowl.
  • Spread 1/2 of the strawberry mixture on cake layer. Arrange 1/2 of the sliced strawberries on top of strawberry mixture. Repeat layers, ending with cake. Frost top and side of cake with remaining whipped topping.
  • Refrigerate at least 1 hour or until ready to serve. Garnish with strawberry fans and mint leaves. Store leftover cake in refrigerator.

How to Make Strawberry Fans

With sharp knife, cut whole strawberries into thin slices, cutting up to, but not through, stem ends. Hold stem end in place and gently fan out slices from stem.

I only had one skeptic, she didn't like it because i put it in the refrigerator, and it also "fell apart" easily. I disagreed. I loved it. I didn't use as much cool whip as called for though, and on the top of the cake i used strawberry syrup to decorate.

I made this to have a light dessert after a heavy lasagna dinner last month and my mother asked me to bring it to the Thanksgiving get-together. I actually didn't taste it, but she's very picky so it must be good! On the advise of others, I didn't use the milk and apparently it turned out fine.

He loves strawberry shortcake but can't eat it, he was thrilled that he could have a 'little' of this and it was just like strawberry shortcake, it made his day.

Was delicious and everyone thought it was very impressive because it looked complicated. I used lite cool whip to save on calories and no one noticed. Filling becomes runny after sitting but, I think that is unavoidable.
