  • Heat oven to 350ºF.
  • Microwave SMART ONES on HIGH 20 sec. or just until thawed. Use spoon to scrape Strawberry and Cream Topping off Shortcake into small bowl; refrigerate until ready to use. Crumble shortcake into medium bowl.
  • Beat egg whites in separate bowl on high speed until stiff peaks form; set aside. Add dry cake mix to crumbled cake; mix well. Add soda; beat with mixer on medium speed until smooth. Gently stir in egg whites. Spoon into 12 paper-lined muffin cups.
  • Bake 11 to 12 min. or until toothpick inserted in centers comes out clean. Cool in pan 10 min. Remove to wire racks; cool completely.
  • Mix cream cheese and sweetener in medium bowl until blended. Gently stir in COOL WHIP; spread onto cupcakes. Top with reserved strawberry and cream topping, chopped fresh strawberries and kiwi.
