  • Heat oven to 325°F.
  • Place 1 cookie in each of 12 paper-lined muffin cups.
  • Beat cream cheese, sugar and vanilla in large bowl with mixer until blended. Add lemon zest and juice; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended. Spoon over crusts.
  • Bake 17 to 20 min. or until centers are almost set. Cool completely.
  • Refrigerate 2 hours.
  • Spoon preserves into microwaveable bowl just before serving cheesecakes. Microwave on HIGH 30 sec. or just until warmed; stir. Spoon over cheesecakes. Top with strawberries.

I would love to make these mini cheesecake cookies for "the cookie table" at an upcoming Pittsburgh wedding that I'll be attending. Does anyone know if these can be made in advance and then frozen?

Rated 4 out of 5 by from answering the person about wafers To answer the person below, i think like nilla wafers would work but not like the wafer layered cream bars you know the brown pink and white wafers? i don't think those would work, but something like a nilla wafer cookie would for sure.

Rated 5 out of 5 by from These make my mouth water About freezing...I have bought cheescakes that are frozen...So don't know why you couldn't freeze these also....Maybe not with the strawberrys on top...They wouldn't fare well being frozen...But no problem dressing them up when you take them out of freezer with your strawberries....
