This bright duo gives pie the heave-ho and you a delightful way to enjoy fresh rhubarb. Add a Cool Whip dollop and taste how yummy low-fat can be.

What You Need

lb.   fresh rhubarb, cleaned, cut into 1/2-inch-thick slices
1/2
cup  sugar
1
cup  water
1
pkg.  (3 oz.) JELL-O Strawberry Flavor Gelatin

Make It

TOSS rhubarb with sugar in large saucepan; stir in water.

BRING to boil on medium heat, stirring constantly; cook 2 min. Remove from heat. Add dry gelatin mix; stir 2 min. until completely dissolved. Pour into dessert cups.

REFRIGERATE 3 hours or until firm.

Substitute
Prepare using JELL-O Raspberry Flavor Gelatin.
Note
For a slightly sweeter dessert, increase sugar to 3/4 cup.
Special Extra
Top each serving with 1 Tbsp. thawed COOL WHIP Whipped Topping and a fresh strawberry.
