Stuffed Acorn Squash

large acorn squash, cut in half

lb. Italian sausage

pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken

cup chopped apple

cup raisins

Make It

PREHEAT oven to 350°F. Place squash, cut sides down, on foil-lined 15x10x1-inch baking pan; cover. Bake 30 minutes.

MEANWHILE, remove casing from sausage. Crumble sausage into small skillet. Cook until no longer pink; drain.

PREPARE Stuffing as directed on package, except decrease butter to 3 Tbsp. Add sausage, apple and raisins; mix lightly.

TURN squash over. Spoon 3/4 cup of the stuffing mixture into each squash half; cover with foil. Bake an additional 30 minutes or until squash is tender, removing foil for last 10 minutes of baking time.

It was not what I thought it would taste like so I changed it up with beef onion cheese bell pepper.

This was so much better than I expected! I did take the advise to micro the squash first to make cutting easier. I also used ground beef with onions and craisins instead of sausage and raisins. It was delicious! Even my very picky 5 year old ate it!

This was alright. There just wasn't enough taste for me. It was kinda bland. And the sausage wasn't great either. Definately change the sausage if you choose to make it for yourself.

Very good, I doubled the recipe for leftovers the next day. Instead of raisins I put in cranberry's it was yummy.

I bought two small pumpkins thinking I could do something like this. Do you guys think pumpkin could be substituted for the squash? Any ideas about how pumpkin, sausage, onion combo would be? I'm chicken to try without an opinion! ha

we used this recipe for our Thanksgiving stuffing, in the bird as well as in acorn squash...added onion and fresh mushroom....Delicious!

My husband and I loved this recipe!!! It was so easy to make and allowed me to make other parts of dinner while going through the process of making this dish! It was very tasty...we sprinkled parm. cheese on top and let it bake a few minutes!
