Substitute 6 small boneless skinless chicken breasts, pounded to 1/4-inch-thickness, for the turkey breast slices.

DELICIOUS! I used whole wheat stove top and enough egg beaters to equal one egg. I used McCormick turkey gravy mix (lower in calories and cheaper) and didn't add it in until the end. Next time I will cook covered or maybe brush with the gravy to keep the cutlets more moist. I served with fresh steamed broccoli and mashed cauliflower/potatoes. Will definately make again!
This was wonderful! The first time I made it straight from recipe, using sliced deli turkey (just cook til gravy bubbles, as the turkey is fully cooked already). Second time, I added fresh chopped tomato into the stuffing, sprinkled sliced scallions and a little mozzarella cheese on stuffing before rolling up, and added gravy during last 10 minutes of cooking. Delish! A new staple meal in our house!!
Tastes great. My family loves it...and my husband doesn't eat turkey!!
