I have made this several times and it is a good way to use all those zucchini's when in season. It is great to make ahead scoop the middle out and mix with the other ingredients refrigerated till ready then put it together just before a quick dinner. Pop them in the oven to heat and you have a great side dish or a whole meal.
I used french fried onions since that's all I had and sprinkled on top with the cheese. It was very good.
it was good, nothing too exciting, but I felt healthy afterwards :)
