  • Heat oven to 375°F.
  • Cook zucchini and yellow squash in large skillet sprayed with cooking spray on medium heat 5 min. or until crisp-tender, stirring frequently. Remove from heat.
  • Whisk eggs and dressing in large bowl until blended. Stir in Parmesan. Add zucchini mixture and all remaining ingredients; mix lightly. Spoon into 8-inch square baking dish.
  • Bake 35 to 40 min. or until center is set and edges are lightly browned.

    It looks like a really good recipe but I don' tolerate that many eggs. Maybe 1 egg, but not four. Does anyone have away around that problem? If you do, Please tell me at: Thanks, Susan

    Fantastic recipe! My elderly mom found this online and has made it for our family's get-togethers a few times already. It's always a big hit! _This ********* has lots of flavor, the 5 cheese blend is perfect - and necessary - for this dish. (You can use more cheese, but don't use less and a medium to large onion adds more flavor than a small one)). I love how fast and easy it is to make. AND if you don't follow the recipe exactly, it still turns out great. This recipe is pretty much foolproof and lends itself well to experimentation. _ if you want to use it more as a main dish, just add a pound of kielbasa, or cooked hamburger or cooked Italian sausage. Layer the meat on the bottom of the greased ********* dish and spoon the squash mixture over it. Bake for the usual 40 minutes. _For kids, using "baby hotdogs" (Little Smokies) revs up the wow factor of this dish._
