  • Heat oven to 375°F.
  • Cook zucchini and yellow squash in large skillet sprayed with cooking spray on medium heat 5 min. or until crisp-tender, stirring frequently. Remove from heat.
  • Whisk eggs and dressing in large bowl until blended. Stir in Parmesan. Add zucchini mixture and all remaining ingredients; mix lightly. Spoon into 8-inch square baking dish.
  • Bake 35 to 40 min. or until center is set and edges are lightly browned.

Variation

If you like zucchini, you will love this recipe. It is so easy to prepare and very tasty. I did not change any of the ingredients except that I put less miracle whip in. It came out fine and I am planning on having it for a side dish at my next barbecue.

Rated 2 out of 5 by from Frittata not casserole This recipe is more of a frittata than a casserole. It is very bland and you can't even taste the cheese. I bought Miracle Whip just for this recipe and couldn't taste it at all so using any mayo would be fine and could probably be omitted as both are really just eggs with oil anyway. Very disappointed. Using a much stronger cheese and other veggies and/or meat would help. Without peeling the zucchini and summer squash, it ate a little 'stringy.' Like eggplant parm, I think peeling the zucchini and squash is advisable. Just find a recipe for white veggie lasagna instead. (P.S. Although peppers do, onions don't cook from raw very well when baked and were still crunchy after 40 mins. so definitely saute them first!)

I followed the recipe exactly and the only thing I would change the next time I make it is I'm going to try adding a can of diced green chiles for a bit of a kick. Hot sauce might not be a bad idea either!

I made this as side dish for a BBQ to use up some zucchini and squash from my garden and it was good and easy to make, however it is definitely a more of a brunch dish. Next time I'll add some diced hot chili peppers and other veggies for a little more flavor.

Rated 5 out of 5 by from Easy and tasty Made this for dinner tonight, easy to compete, too hot to cook tonight ..so I liked it, husband suggested additional onion and some pre cooked bacon. I used low fat mayo instead of miracle whip. I will be making this again, trying hubby's suggestions.

I also only had 3 eggs and Miracle Whip Light. But it came out so good. Have more squash from garden and plan to make again.

LOL But even without the cheese, it was very good. My fiance and I ate the whole dish in one serving!

Rated 3 out of 5 by from Ths was good, but a little eggy & somewhat bland. Ths was good, but a little eggy & somewhat bland. I would make again, but I think next time I will spice it up a little & also add some tomato sauce or tomatoes to it.
