  • Heat oven to 375°F.
  • Heat large skillet sprayed with cooking spray on medium heat. Add zucchini and yellow squash; cook and stir 5 min. or until crisp-tender.
  • Beat eggs and dressing in large bowl with whisk until well blended. Stir in Parmesan. Add zucchini mixture and all remaining ingredients; mix lightly. Spoon into 8-inch square baking dish.
  • Bake 35 to 40 min. or until center is set and edges are lightly browned.

    Ths was good, but a little eggy & somewhat bland. I would make again, but I think next time I will spice it up a little & also add some tomato sauce or tomatoes to it.

    I made this recipe for a Father's Day BBQ and it was a hit! There wasn't any left. I followed the recipe exactly and the only thing I would change the next time I make it is I'm going to try adding a can of diced green chiles for a bit of a kick. Hot sauce might not be a bad idea either!
