  • Heat oven to 375°F.
  • Cook zucchini and yellow squash in large skillet sprayed with cooking spray on medium heat 5 min. or until crisp-tender, stirring frequently. Remove from heat.
  • Whisk eggs and dressing in large bowl until blended. Stir in Parmesan. Add zucchini mixture and all remaining ingredients; mix lightly. Spoon into 8-inch square baking dish.
  • Bake 35 to 40 min. or until center is set and edges are lightly browned.

If you like zucchini, you will love this recipe. It is so easy to prepare and very tasty. I did not change any of the ingredients except that I put less miracle whip in. It came out fine and I am planning on having it for a side dish at my next barbecue.

I followed the recipe exactly and the only thing I would change the next time I make it is I'm going to try adding a can of diced green chiles for a bit of a kick. Hot sauce might not be a bad idea either!

I made this as side dish for a BBQ to use up some zucchini and squash from my garden and it was good and easy to make, however it is definitely a more of a brunch dish. Next time I'll add some diced hot chili peppers and other veggies for a little more flavor.

Rated 5 out of 5 by from Easy and tasty Made this for dinner tonight, easy to compete, too hot to cook tonight ..so I liked it, husband suggested additional onion and some pre cooked bacon. I used low fat mayo instead of miracle whip. I will be making this again, trying hubby's suggestions.

I also only had 3 eggs and Miracle Whip Light. But it came out so good. Have more squash from garden and plan to make again.

Rated 5 out of 5 by from I LOVED IT. I LOVED IT. MY KIDS LOVED IT. WILL CERTAINLY MAKE IT AGAIN. THIS A GOOD WAY TO GET KIDS TO EAT VEGGIES THAT THEY THINK THAT THEY DON'T LIKE. I ALSO MIXED ABOUT 1/2 PKG OF POWDER RANCH DRESSING MIX IN THE MIRICLE WHIP. MADE IT EVEN TASTIER I THOUGHT. I ALSO SUBSITUTED THINLY SLICED EGGPLANT FOR THE ZUCCINI BECAUSE I DIDN'T HAVE ANY AND IT WAS JUST AS GOOD.

I was happy that I could impress my boyfriend with this dish ;) I added tomatoes which was a nice touch...but I wonder if that's partly why the bake still was a bit runny?? I left it in the oven for 55 minutes to make sure it cooked fully through. Either my sauteed onions or tomatos made it runny. Regardless, excellent dish. There was just the 2 of us and we polished it off that night!
