This was a new quick and easy way to prepare rice. I left out the water chestnuts, used a green pepper, and added a little extra cheese. I also thought this would be a better dish served hot. I cooked the veggies in the microwave first, then mixed everything together and then heated it again in the microwave. My husband and kids loved it, and it was great that I could sneak in the veggies for my kids : ) !
