Super-Crunchy Fried Chicken

The secret to the amazing crunch of our Super-Crunchy Fried Chicken? Dry roasted peanuts. They're chopped and added to a cracker-crumb coating.

What You Need

 RITZ Crackers, finely crushed (about 1/2 cup)
cup   chopped PLANTERS Dry Roasted Peanuts
cup  flour
tsp.  ground red pepper (cayenne)
lb.  chicken drumsticks
 eggs, beaten
cups  PLANTERS Peanut Oil

Make It

HEAT oven to 350°F.

MIX cracker crumbs, nuts, flour and red pepper in shallow dish. Dip chicken, 1 piece at a time, in crumb mixture, turning to evenly coat all sides of chicken. Dip in egg mixture, then coat again with crumb mixture. Gently shake off excess crumbs.

HEAT oil in large saucepan to 350°F. Add half the chicken; cook 5 min. Remove from oil; drain on wire rack placed on rimmed baking sheet. Repeat with remaining chicken.

BAKE 20 min. or until chicken is done (165°F).

Use Your Oven
Omit chicken frying step. Coat chicken as directed. Place on foil-covered rimmed baking sheet sprayed with cooking spray. Drizzle evenly with 1/4 cup melted butter or margarine. Bake in 375°F oven 35 to 45 min. or until chicken is done (165°F).
How to Check Chicken For Doneness
Always use a thermometer to see if chicken is cooked through. The internal temperature should register at least 165ºF. When the chicken is completely cooked, the juices should run clear.
