  • Heat oil in large deep skillet on medium-high heat. Add chicken; cook 8 to 10 min. or until done, stirring occasionally.
  • Mix broth, dressing and flour until blended; gradually add to chicken, stirring constantly. Bring to boil; simmer on medium-low 3 min. Stir in tortilla pieces.
  • Sprinkle with cheese; cover. Simmer 3 to 5 min. or until melted. Top with salsa.

Great recipe, we used leftover chicken from some chicken tacos, so the chicken was really flavorful. We also like things spicy so we added a ton of spicy seasoning. We used half the ranch and supplemented the other half with some enchilada sauce, and we also added some black beans. Next time we plan to add some jalapenos and some mexicorn! It was easy, and tasted great! I am a teacher and this makes a great leftover lunch, all the other teachers asked me about my wonderful looking meal. I do wonder where they got that picture from, because that is nowhere near what our food looked like, and even if we used the right ingredients, I don't know how we could possibly get the food to look like that! Either way, it will be added to the list, and tastes great!

Rated 3 out of 5 by from I made this recipe today and my husband like it a lot. I made this recipe today and my husband like it a lot. However, I found the tortillas soggy and felt there were too many. I would make it again, however, I would use two less tortillas and incorporate some of the salsa into the sauce. I would also include sliced black olives. I would then bake the dish in the oven until the cheese was melted and the tortillas had some body. While I liked the sauce, when I try it again, I might add some cream cheese just for fun.

It's very easy and quick to make, and if you love enchilada's, you'll love this spinoff. it's just a one-pan dinner, and it's cheesy, gooey, and tasty! I added spices to the chicken while cooking. I put more cheese in, too...cause we love cheese. I would definetely serve with sour cream. Mine actually looked almost identical to the picture! I am definetely making this easy and yummy dish again for me and my husband!

Rated 4 out of 5 by from Made this last night and it was actually quite good. Made this last night and it was actually quite good. I will definately add this to my revolving menu. As others did, I used green chile enchilada sauce instead of the ranch dressing and added black olives and a little onion to the mix. The flour tortillas were a little soggy so I'd recommend putting them in just before adding the cheese. Served with an avocado, tomato and onion salsa this is a quick and delicious winning recipe.

I usually make enchiladas from scratch which takes a long time so I thought I'd try this quicker recipe. I was not dissapointed!! I omitted the oil and used cooking spray to save on some fat & calories. I also added some taco seasoning to the chicken when it was cooking and a can of black beans before adding the tortillas. It was very easy to make, had a lot of flavor and was very satisfying. Great quick weeknight meal!!!

I didn't think the sauce was saucy enough, so I then added an extra can of chicken broth and extra ranch dressing and simmered down a little. It turned out more like a enchilada queso soup. We thought it was very good, although my husband said he'd prefer it without the tortillas! I will definately make again. It was very quick & easy!

We gave it a little more tasty zip with sauteed onion & garlic added to the chicken stage, plus some sour cream & chopped cilantro to top the whole thing off (which made it prettier too). Yes, it was a big hit with the kids, and an easy weeknight meal. Thanks for simplifying our busy day.

Tasted slightly bland, so we added a little more salsa. My husband thought the tortillas were too much like noodles, but I may have let it simmer a little too long. I'll definitely be making this again when I need something quick, easy, and tasty!
