This stuff is exceptional. I am a vendor at a local farmers market and this jam is BY FAR my best seller. I actually make a couple of variations of this. I market one as MONKEY BUTTER as is, I sell a second version which I caramelize the bananas and sugar, adding spices and flavorings, and market it as CARAMELIZED BANANA BUTTER, or BANANAS FOSTER JAM depending on my additions and alterations.
Thank you for all your reviews! Made three batches tonight - two with the cinnamon/pumpkin pie spice/brown sugar. I made the third batch substituting a small container of blender-whirred blueberries for part of the bananas. It was a total hit! This is a terrific recipe.
This taste great. Spread on plain white bread taste like banana bread. I've made 2 batches so far. The texture is very thick. I need to get it so it will spread a little easier. The bananas were not overly ripe. I'll have to try very ripe next time.
