  • Rinse clean plastic containers and lids with boiling water. Dry thoroughly.
  • Peel and pit peaches. Finely chop or grind fruit. Measure exactly 4 cups prepared fruit into large bowl. Stir in lemon juice.
  • Place sugar in large saucepan. Add pectin; mix well. Stir in water. Bring to boil on medium-high heat, stirring constantly. Boil and stir 1 min. Remove from heat. Immediately add peach mixture; stir 1 min. or until well blended.
  • Fill all containers immediately to within 1/2 inch of tops. Wipe off top edges of containers; immediately cover with lids. Let stand at room temperature 24 hours. Jam is now ready to use. Store in refrigerator up to 3 weeks or freeze extra containers up to 1 year. Thaw in refrigerator before using.

How to Measure Precisely

To get exact level cup measures of sugar, spoon sugar into dry metal or plastic measuring cup, then level by scraping excess sugar from top of cup with a straight-edged knife.

Syrup everytime! I tried reducing amount of fruit . . . still syrup. This technique worked with raspberrry jam. I give up with the peach. Any suggestions?

Rated 1 out of 5 by from Recipe does not work I am a very experienced cook and have made the peach and strawberry freezer jams many times in years past. But, this year, in an effort to reduce our sugar consumption, I made the peach freezer jam using the Less or No Sugar Needed recipe. I followed the recipe exactly, timing it to the second. It did not set, and as other reviewers have noted, it was like syrup. I called the 800 number twice, and got no more help than what was on the printed directions for the re-make. Yesterday, I followed the directions for a re-make of a Trial Batch. And, again it did not set!! Your recipe developers need to review the recipe as evidently others have had the same experience over the years. One reviewer noted (on a different page of reviews) that the amount of water for the re-make of the jam was different from the amount in the printed directions in the box. However, I did not see her review until after I had already re-made my Trial Batch. If indeed, there is a discrepancy in the printed and website directions for a re-make, it behooves Sure Jell to correct the error. This was a complete waste of my time and peaches!
