For stronger ginger flavor, increase crystallized ginger to 1/2 cup.

I followed Luv2cook62's advice and love this jam! Not only is it great on toast but makes great sauces for chicken, pork and fish. I've lost count of the batches i have made this year!
I cut back sugar to 5 cups and added the 1/2 cup ginger. It immediately won rave reviews with the family. It is definately a keeper.
I had to try this recipe, but I had to add more ginger and a little nutmeg to help make it taste even better. All in all it is a very good wat to use peaches.
