  • Bring boiling-water canner, half-full with water, to simmer. Wash jars and screw bands in hot, soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling.
  • Peel and core pears. Finely chop or grind fruit. Measure exactly 3 cups prepared fruit into 6- or 8-quart saucepot. Remove colored part of peel from orange using vegetable peeler; set aside. Remove and discard remaining white part of peel from orange. Chop fruit, reserving any juice; add to saucepot. Repeat procedure with lemons; add to saucepot. Cut reserved orange and lemon peels into thin slivers, or chop or grind; add to saucepot. Stir in pineapple in juice and cherries.
  • Stir pectin into fruit in saucepot. Add butter. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly.
  • Stir in all sugar quickly. Return to full rolling boil and boil exactly 1 minute, stirring constantly. Remove from heat. Skim off any foam with metal spoon.
  • Ladle quickly into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. Water must cover jars by 1 to 2 inches; add boiling water if needed. Cover; bring water to gentle boil. Process 10 minutes. Remove jars and place upright on a towel to cool completely. After jars cool, check seals by pressing middle of lid with finger. (If lid springs back, lid is not sealed and refrigeration is necessary.).

At altitudes above 1,000 feet, increase processing time as indicated. 1,001 to 3,000 feet: Increase processing time by 5 minutes. 3,001 to 6,000 feet: Increase processing time by 10 minutes. 6,001 to 8,000 feet: Increase processing time by 15 minutes.

It looks beautiful too, just be sure to keep as much of the cherry juice out as possible the color could take over all the beautiful ivories, oranges and yellows in this jam. I've tried most of the sure jell recipes...this one is at the top of my list for all time favorites. Well done whoever invented this treasure!

I have had problems with it setting in the past, so I find it helpful to use 1 and 1/3 boxes of pectin. To keep it getting too pink from the cherries ... wash them AFTER you cut them, and blot on a papertowl until the dye stops transferring. (you may have to wash more than once.) ENJOY!

The cherries really set it off and it is clear so you can see the fruits well. I love it and will make it again. I also donated 2 jars to out sorority auction. I used pretty jars with red and green raffia trims.

I made an eccellent touch for my homemade gift baskets that I give out at Christmas time. It is eccellent with croissants and coffee on a cold winter morning, or as a nice evening snack.
