If you don't like the skin of the peach, place whole peaches in boiling water for 30 sec. Remove fruit from water with a slotted spoon and immediately place in a bowl of ice water to stop the cooking process. Remove fruit from the water, then peel with a paring knife.
Choose round, plump peaches that give slightly to gentle pressure. Peaches should have smooth, unwrinkled skins and a sweet aroma. Avoid very hard fruit which will never ripen to full flavor. Store ripe peaches, loosely packed in a plastic bag, in the refrigerator for up to 5 days.
Peaches and fresh vegetables team up to provide an excellent source of vitamin C in this delicious side salad that's also both low in sodium and high in vitamin A.
