Sweet Pear and Cheddar Quesadillas

  • Heat oven to 375°F.
  • Cook 2 Tbsp. butter and 1 Tbsp. sugar in large saucepan on medium heat 1 to 2 min. or until butter is melted and mixture is well blended, stirring occasionally. Stir in vanilla and 1/2 tsp. cinnamon. Add pears; mix lightly. Cook 5 to 7 min. or until pears are tender, stirring frequently. Remove from heat; set aside. Mix remaining sugar and cinnamon; set aside.
  • Spoon pear mixture evenly onto bottom half of each of the tortillas; sprinkle with cheese. Fold tortillas in half. Melt remaining butter. Brush half of the butter evenly onto tops of quesadillas; sprinkle evenly with half of the cinnamon mixture. Gently turn quesadillas over; place on baking sheet sprayed with cooking spray. Brush with remaining butter, then sprinkle with remaining cinnamon mixture.
  • Bake 15 min. or until quesadillas are lightly browned and cheese is melted. Serve warm topped with COOL WHIP.


One serving of this warm quesadilla makes a nice dessert for a crisp fall night.

Make Ahead

Cook pear mixture ahead of time. Cover and refrigerate until ready to use. Spoon onto tortillas and bake as directed just before serving.

How to Double the Recipe

This wonderful dessert combines the savory cheese with the sweetness of pears, and can be easily doubled and baked in a 15x10x1-inch baking pan.
