How to Cook Sweet Potatoes
For best results, the sweet potatoes need to be cooked until very tender before mashing them. You can either cook them in boiling water or bake them. To cook on the stove top, cook the whole potatoes in boiling water 25 to 30 min. or until tender. Or, pierce the whole potatoes, place on a baking sheet and bake at 400°F for 45 to 55 min. or until tender.
Pumpkin Pie Spice Substitute
No pumpkin pie spice on hand? No problem! Here's an easy way to make your own. For each 1 tsp. of pumpkin pie spice needed, just combine 1/2 tsp. ground cinnamon, 1/4 tsp. ground ginger, 1/8 tsp. ground allspice and 1/8 tsp. ground nutmeg.
Native to the American tropics, sweet potatoes are long edible root vegetables which belong to the morning glory family.
Sweet Potato or Yam?
Although Americans often refer to sweet potatoes as yams, true yams are not heavily marketed in the United States. There are many varieties of sweet potatoes, but just two of those are widely available. One has a thin, light yellow skin and pale yellow flesh which becomes dry and crumbly when cooked. The other is often erroneously referred to as a yam. It has a thicker, dark orange skin and a bright orange flesh that becomes moist when cooked. Bright orange potatoes sold in cans and labeled as yams are actually sweet potatoes.
How to Select Sweet Potatoes
Sweet potatoes should have smooth, bright, uniformly colored skins that are free from blemishes.
The sweet potato has been called a "superfood", since it is a good source of both fiber and potassium, and high in both vitamins A and C.
