  • Heat oven to 350°F.
  • Mix potatoes, orange juice and half the butter until blended; spoon into 2-qt. casserole sprayed with cooking spray.
  • Mix remaining butter, cookie crumbs, nuts and sugar until blended; sprinkle over potato mixture.
  • Bake 30 min. or until potato mixture is heated through and topping is golden brown.

How to Toast Nuts

Toasting nuts adds crunch and intensifies their flavor. To toast nuts in the oven, spread nuts in single layer in shallow baking pan. Bake at 350°F for 8 to 10 min. or until golden brown, stirring occasionally. To toast nuts on the stovetop, place nuts in ungreased skillet. Cook on medium heat until golden brown, stirring frequently. To toast nuts in the microwave, place up to 1 cup of nuts in a microwaveable shallow dish. Microwave on HIGH until fragrant and crisp, stirring every 30 sec.

Rated 5 out of 5 by from This is the BEST sweet potato casserole that I have ever made! This is the BEST sweet potato casserole that I have ever made! It was a huge hit with company on Easter Sunday. I have made similar sweet potato dishes, but this one was better because it wasn't excessively sweet. The orange juice in the potatoes makes a wonderful compliment to the gingerbread/pecan cookie topping. Next time I will make a double-batch because our guests took 3rds and 4ths so there were none left over!

My family is begging for it for Thanksgiving again! I did have to add more sugar to give it an extra sweetness, however I did not make sweet potatoe pies. This replaces the pie! It's delicious!

Rated 5 out of 5 by from SOOO GOOD. SOOO GOOD. I made it for Thanksgiving and it was a hit, even with the ones that won't eat sweet potatoes usually. Not to sweet. Great hot and still very good cold as a snack! I omitted the salt and the orange juice and added 2 tbs of brown sugar after reading the comments. YUMMY!

Rated 4 out of 5 by from It was very good. It was very good. My family loved it. After reading the other comments I cut the salt in 1/2 and added 2 extra tbsps of sugar. However, next time I make this I plan on only using 1/2 the amount of orange juice, the taste of orange juice was a tad bit overwhelming.

Very easy to prepare, WONDERFUL FLAVOR. You can eat this one hot or cold with leftovers. This one is now a permanent dish on my Thanksgiving menu.

This will definitely be one of the dishes that will be on the Thanksgiving table for years to come. Everyone loved it, even the people that dislike sweet potatoes. I added miniature marshmallows. It was divine!!!
