Sweet Potato Streusel

Sweet Potato Streusel recipe

Some will see this as a sweet potato side dish for a dinner menu. Others, observing the pecans and crushed ginger cookies, may take it for dessert.

What You Need

lb.  sweet potatoes (about 4), peeled, cooked and mashed
cup  orange juice
Tbsp.   butter or margarine, melted, divided
 gingersnaps, finely crushed
cup  chopped PLANTERS Pecans, toasted
Tbsp.  brown sugar

Make It

HEAT oven to 350°F.

MIX potatoes, orange juice and half the butter until blended; spoon into 2-qt. casserole sprayed with cooking spray.

MIX remaining butter, cookie crumbs, nuts and sugar until blended; sprinkle over potato mixture.

BAKE 30 min. or until potato mixture is heated through and topping is golden brown.

How to Toast Nuts
Toasting nuts adds crunch and intensifies their flavor. To toast nuts in the oven, spread nuts in single layer in shallow baking pan. Bake at 350°F for 8 to 10 min. or until golden brown, stirring occasionally. To toast nuts on the stovetop, place nuts in ungreased skillet. Cook on medium heat until golden brown, stirring frequently. To toast nuts in the microwave, place up to 1 cup of nuts in a microwaveable shallow dish. Microwave on HIGH until fragrant and crisp, stirring every 30 sec.
