Toasting nuts adds crunch and intensifies their flavor. To toast nuts in the oven, spread nuts in single layer in shallow baking pan. Bake at 350°F for 8 to 10 min. or until golden brown, stirring occasionally. To toast nuts on the stovetop, place nuts in ungreased skillet. Cook on medium heat until golden brown, stirring frequently. To toast nuts in the microwave, place up to 1 cup of nuts in a microwaveable shallow dish. Microwave on HIGH until fragrant and crisp, stirring every 30 sec.

This is the BEST sweet potato casserole that I have ever made! It was a huge hit with company on Easter Sunday. I have made similar sweet potato dishes, but this one was better because it wasn't excessively sweet. The orange juice in the potatoes makes a wonderful compliment to the gingerbread/pecan cookie topping. Next time I will make a double-batch because our guests took 3rds and 4ths so there were none left over!
FANTASTIC!! This was my first attempt at cooking Sweet Potatoes. Everyone loves this dish at Thanksgiving. I doubles the recipe and there was very little left. I think everyone had seconds.
