  • Heat oven to 400ºF.
  • Prepare corn muffin batter as directed on package; spread onto bottom of 12-inch pizza pan sprayed with cooking spray.
  • Bake 8 to 10 min. or until lightly browned. Meanwhile, cook meat with seasoning mix as directed on package.
  • Sprinkle 1 cup cheese over crust; top with meat mixture and remaining cheese.
  • Bake 4 to 5 min. or until cheese is melted.

I did use 2 boxes of corn bread mix instead of 1 for a larger thicker crust (so glad I did - it was perfect) - I also added onions & pepperjack cheese along with the cheddar cheese. This was so easy to make since we had taco meat left over from taco salads last night. Highly recommend :)

But that is only because this being a "pizza" is misleading. You can't pick it up and eat it like that. The crust falls apart badly. We ate it with a fork. I did add salsa and lettuce after all baking and it tasted GREAT!!!

Added some onion, peppers, on garlic powder to the meat, also added chili powder and a few other seasonings, But I always do when I make tacos (we like it spicey)

Rated 1 out of 5 by from We used a box of Jiffy cornbread. We used a box of Jiffy cornbread. The resulting crust was much too sweet. Perhaps another brand would be better or making cornbread from scratch, but then that would defeat the simplicity of the recipe. Neither adults NOR kids liked this one and it was all because of the crust.

I used a Mexican cheese called Quesidilla, a white melting cheese, toppped it with our favorite toppings like jalenopes,avaccado,tomatotes,lettuce,and green salsa. I will make this again!!!

My boyfriend and I thought it tasted like taco meat on top of cornbread. I should have made regular tacos. Maybe I missed something that made the big difference-my cornbread was a little thick perhaps.

I covered the cornbread with a layer of refried beans (like you would do with tomato sauce on a traditional pizza). Then I topped it with the beef and cheese, heated, and served with sour cream. It turned out really delicious!

I did what others suggested and added refried beans on top of the corn bread and a layer of salsa on top of that. I also added tomatoes and sour cream on top after it baked. It really heated up good for leftovers.
