Rated 5 out of 5 by from this was a very easy recipe..I did not have most of the ingredients,so I improvised,using olive oil... this was a very easy recipe..I did not have most of the ingredients,so I improvised,using olive oil for the dressing,cheesy taco seasoning,frozen vegetables and regular white rice(had to pre cook for 15 min and then put in skillet to finish) my husband,who is not a big rice fan)liked it,his friend that lives with us and mother-in-law liked it and that was good..

I really wasn't sure about this recipe as I watched it simmer on the stove, but it was really delicious!!! We don't usually care for brown rice, but in this dish it was super tasty. I served it with a bit of sour cream and might try adding some black beans next time.

Didn't even have all the ingredients...had white boil-in-bag rice (had to cook 5 min longer), a green pepper, and the taco seasoning on-hand...made it anyway, and it was still very yummy. My hubby, who only sometimes likes pork, gave it two thumbs up.

My picky eaters liked it a lot, I will cut back on the taco seasoning next time though... A bit too spicy for my hubbys sensitive tummy.
