  • Cook crumbles in large nonstick skillet as directed on package.
  • Stir in rice, water, tomatoes and seasoning mix. Bring to boil. Sprinkle with cheese; cover. Remove from heat. Let stand 5 min.
  • Top with lettuce.

Rated 5 out of 5 by from This is a wonderful recipe - super quick and easy. This is a wonderful recipe - super quick and easy. Once I made, I substituted things I love - I use extra lean ground beef (about a pound) rather than BOCA and I substitute a can of drained petite cut diced tomatoes instead of fresh tomatoes. I also throw in a can of drained beans (black or kidney) which adds taste and fiber! I top with salsa, chilis, sour cream and olives if available. Yummy and lots of leftovers!

Rated 4 out of 5 by from We altered the recipe a bit. We altered the recipe a bit. We used ground turkey instead of the Boca product. We also decreased the amount of rice in the recipe. Since others said that the recipe was dry, we used salsa instead of tomatos. We then served the dish 'salad style' by spooning out the meat-rice mixture over about a cup of salad in a bowl topping it off with the cheese and some low-fat sour cream. We would have this again.

Rated 5 out of 5 by from This is quick and easy! This is quick and easy! I added onions, black beans and black olives to the recipe! I felt so much better eating boca then hamburger! This is a great lowfat recipe. For toppings I had salsa, sour cream, cheese. We used scoops corn chips and warm tortillas. I wish I had remembered jalapanos or banana peppers! My husband had 3 servings! Will definitely make this again.

I added corn and subbed 1 can of un-drained tomatoes and green chilies for the chopped tomato and just reduced the water by about a cup. It added more flavor and made it even easier (which is hard to do, it’s so easy already!). Even my picky husband liked it!

This was a great dinner served IN the taco with sour cream, grated cheese, salsa, tomatoes and onions. I also made some for my 'carnavoir' friends...who loved it! TRY IT!!! It is great!!!
