Very tasty, I boiled potatoes as if I were making mash potatoes instead of having baked potatoes!

When my maid made this for us, it was great! But she chopped up the inside of the potatoes & fried them first for an added crunch. Then continued the recipe. Very Yummy!

My husband and I love this recipe! I used a medium queso con salsa cheese dip instead of velveeta. We were delightfully surprised at how tasty these "potato skins" turned out. Will definitely make it again!

We loved it! I added taco seasoning mix to the beef mixture and it gave it an added spice.

I really love this recipe but for an added twist cook ground beef and drain off excess oil add velvetta mild mexican cheese (block) and mild or medium salsa. Stuff the meat mixture into the potatoe and top with sour cream and green onions . Your entire family will love it....The ground beef can also be substituted for ground turkey or chicken

Fast an easy, just like i need it. I actually baked the potatoes in the microwave which made it faster than the using the oven.

This recipe is not only quick,it`s nutricious.It has your veggie,meat is your iron,andcheese is of course your dairy.I`m sure my kids will love it and even Dad.(p.s. the cheesier the better!!!)
