  • Mix first 4 ingredients until well blended. Remove 1/2 cup of the dressing mixture; refrigerate for later use.
  • Thread chicken and vegetables onto 6 skewers; place in shallow dish. Pour remaining dressing mixture over kabobs. Refrigerate 30 min. to marinate.
  • Heat grill to medium-high heat. Remove kabobs from marinade; discard marinade. Grill kabobs 10 to 15 min. or until chicken is done, turning after 8 min. Serve with reserved dressing mixture.

I used drumsticks, baked the chicken with half of the "sauce" over it, & cooked the veggies on the stove adding the extra "sauce" for the last 10 minutes of cooking. I also served the veggie mixture over rice. It was outstanding!!!

Rated 5 out of 5 by from Excellent, easy and healthy! Excellent, easy and healthy! I used chicken, mushrooms, and zucchini and marinated for several hours. Hubby grilled about 12 minutes on each side as chicken pieces were thick. The reserved marinade was great as a dipping sauce.

We decided to use the leftover dipping sauce for roast beef sandwiches the next day. We will definitely make this again.
