  • Preheat oven to 350°F. Mix graham crumbs, sugar and baking powder in large bowl; set aside. Beat egg, milk and honey with wire whisk until well blended. Add to graham mixture; stir just until moistened. Stir in 1 cup of the graham snacks.
  • Spoon batter evenly into 12 medium muffin cups sprayed with cooking spray. Toss remaining 1/2 cup graham snacks with the marshmallows. Sprinkle evenly over batter; press lightly into batter.
  • Bake 16 to 20 min. or until toothpick inserted in centers comes out clean. Let stand 5 min. in pan; remove from pan to wire racks. Cool slightly.

Special Extra

For a special treat, drizzle muffins with 1 melted square of BAKER'S Semi-Sweet Baking Chocolate. Let stand until set.

Rated 5 out of 5 by from These are SO amazing. These are SO amazing. Delicious delicious delicious. They were super easy to make, except for the part where i had to crush the graham crackers. One of the best muffins I have tasted. The chocolate Teddy Grahams add such a yummy and cute part to the muffin (they look like slices of chocolate when you bite the muffin). I used Low Fat Honey Graham Crackers which tastes the same as regular graham crackers. I'll try using low fat milk next time. These are much healthier than most muffins because they don't have any oil or butter added. YUM

I substituted about 3/4 cups of chocolate chips for the teddy grahams which really helps to make these muffins have a great texture. Also, I increased the amount of marshmallows by about 1/4 cup. The muffins tended to fall apart, even after cooling. So, I might play around with adding another egg or something else to try and bind it. Also, they were very sticky. My family loved them and I just purchased the ingredients to make more of them this afternoon. Yummy!

Instead of crumbling the graham crackers, I bought a box of crumbs and measured out 3 cups. I think it was too much though because the batter was *very* thick, and so took too long to cook through, leaving the teddies on top kind of burnt. Also there wasn't enough marshmellow flavor for our tastes. Next time I make these, I'll use less crumbs and mix some extra marshmellows directly into the batter.

Rated 2 out of 5 by from Yummy right out of the oven. Yummy right out of the oven. DO NOT store in airtight container, or the next day you will have a gooey mess. I also added more marshmallows to the mixture before baking. It might be good with cinnamon to add flavor as they are bland.But my daughter loved making them.
