I read " deliab1's " suggestion of Roast-Beef , and the Serrano's , A Very Good recipe deliab1 . !Now mine, NewMexico Minestone -,I had grilled boneless-chicken-breasts( oh ,O K several pounds, kept in fridge for tomorrow lunch ) before I read this ,but the Grilled-Flavor with the chicken ,and I substituted can of mexican-stewed-tomatoes AND the best ingredient ,2 cans of Pinto-beans,drained , but "Your" favorites will surely make this 'Minestrone' recipe G R E A T !!!!!

Rated 1 out of 5 by from I noticed an error in my previous review, so I thought I'd re-write the review. I noticed an error in my previous review, so I thought I'd re-write the review. This soup is very bland, and for those who like rather "bland" soups, then this soup is for you! I happened to of made 2 versions of this soup (Kraft's mild version , and a soup that was a bit hot'n spicy, (which my husband and I much prefered). Instead of adding a tomato, I added 1-(10 oz.) can of Rotel Original Diced Tomatoes & Green Chilies (which gives this soup some heat. Instead of using a small shelled pasta, I added 1/3 cup of Barilla Ditalini. I also used a home-made Italian Dressing, (which I made from a packet I had purchased from Aldi's) instead of using a bottled dressing. I did not use the shredded cheese that was recommended. Instead, I used Kraft's Grated Parmesan Cheese. As for the amount of servings, I found this made 3 to possibly 4 servings, instead of just 2-(2 cup servings ea.).

For fewer calories, less sodium, and just as much flavor I substituted the following: ground turkey, organic canned black beans (no preservatives), low-fat and fat free cheese mixed, and salt-free southwest seasoning instead of dressing. Some fresh markets (Central or Whole Foods) sell no-sodium broth. I stock up when I see it!

Rated 4 out of 5 by from I doubled the recipe because I had 1 lb. I doubled the recipe because I had 1 lb. of meat, and I wish I had added more liquid. By the time it finished cooking, it was more of a casserole than a soup. I will increase either the beef broth or the water next time. It did lack a little flavor, but it was still very tasty, especially with the cheese on top.

Rated 5 out of 5 by from This was really good. This was really good. I made this for my mom and me as a late dinner on a chilly night. I also used the Rotel spicy diced tomatoes(I think I only used the mild)as people said in the reviews and it gave it a bit of a kick and a lot of flavor. Will definitely make it again. Super easy and delicious!

I doubled the recipe for the size of my family and still have enough left overs for the next day. I added canned corn and topped with sour cream along with the cheese. I didn't have cumin so I used a little of chili powder.

My children had a couple of friends over the first time I made it and no one could stop eating it. I doubled the recipe and the entire pot was eaten!

Rated 2 out of 5 by from I found this soup to be boring. I found this soup to be boring. I kept re-checking the recipe to make sure I didn't leave a critical ingredient. It lacked flavor. Maybe adding canned, stewed tomatoes (mexican style)and chopped might have helped, but not sure.
