My family LOVED this! We varied it slightly and used it as a base for tacos and burritos. It was delicious! The only change I made was that I substituted taco seasoning for chili powder. Other than that, I made the recipe up to the point of the lettuce and tomatoes. We placed the rice mixture in the bottom of a taco shell or tortilla then added lettuce, tomatoes, sour cream, guacamole, cheese, or anything else we love in a taco or burrito. This mixture warms up well too! We will use this recipe from now on; this is our new way to eat tacos and burritos!
