Made this for dinner and it came out great! My bf liked it and "is glad there is a whole pot left"! I made exactly as written, except I used whole grain pasta, used diced tomatoes (no chilis) and reduced the water to 1 cup as others suggested. However, 1 cup is not enough water, so I ended up adding about 1 3/4 cup, which once you let the cheese set, the water reduces to perfect consistency. Tastes so fresh!
