  • Blend first 4 ingredients, half the cilantro, and 1 red chile in blender until smooth.
  • Place ribs in slow cooker. Pour prepared sauce over ribs; cover with lid.
  • Cook on LOW 6 to 7 hours (or on HIGH 3 to 4 hours). Remove ribs from slow cooker, discard drippings from slow cooker.
  • Return ribs to slow cooker. Mix A.1. and barbecue sauce until blended; brush onto ribs. Cook, covered, on HIGH 30 min.
  • Transfer ribs to platter. Cut remaining chile into thin slices; place over ribs. Sprinkle with remaining cilantro.

Substitute

Thai red chiles are extremely hot peppers. For less heat, prepare recipe as directed using milder peppers, such as jalapeño peppers.

How to Handle Fresh Chile Peppers

When handling fresh chile peppers, be sure to wear disposable rubber or clear plastic gloves to avoid irritating your skin. Never touch your eyes, nose or mouth when handling the peppers. If you've forgotten to wear the gloves and feel a burning sensation in your hands, apply a baking soda and water paste to the affected area. After rinsing the paste off, you should feel some relief.

Special Extra

For easy cleanup, line slow cooker with plastic liner bag before filling with ingredients and cooking as directed.

Serving Suggestion

Serve with 1/2 cup each hot cooked rice and sautéed fresh vegetables to round out the meal.

Food Facts

Pork spareribs are flavorful, meaty slabs of ribs that range in size from 2 to 4 lb. per slab. Pork back ribs, also known as baby back ribs, are ribs from the pork loin section. A slab of back ribs ranges from 1-1/4 to 2-1/4 lb., and tends to be leaner and less meaty than a slab of spareribs. Similar to pork spareribs, beef back ribs are much larger than pork back ribs, yet still tender and full of flavor.
