  • Pour teriyaki sauce over tofu in shallow dish. Refrigerate 5 to 10 minutes to marinate. Drain tofu; reserve teriyaki sauce.
  • Heat oil in large skillet on medium-high heat. Add tofu; cook 3 to 4 minutes or until golden brown on all sides, stirring occasionally. Remove from skillet.
  • Add red pepper to skillet; cook and stir 2 minutes. Add green onion; cook and stir 1 minute. Add rice and pineapple; mix lightly. Cook 2 to 3 minutes or until heated through, stirring frequently. Add tofu, peanuts and reserved teriyaki sauce; mix lightly. Cook until heated through, stirring occasionally.

Jazz It Up

Stir in 1/2 cup chopped fresh basil leaves with peanuts and/or 1/2 tsp. crushed red pepper with tofu.

    I really liked this recipe but I made a couple little changes. I pressed the tofu in my tofuxpress before marinating it. I also added garlic and orange juice to the teryaki sauce. It came out soooo good!

    This was soooo yummy. I changed it a little bit (no pineapple for me or teriyaki!), and added fresh basil, orange/yellow bell peppers, and green onions. Also I added some Siracha hot sauce, hot chili sauce, and soy sauce which gave it a great kick! My husband LOVED it. Also add some garlic powder and black pepper at the end. To get the tofu really flavorful I cut it into square slices, sprayed the pan with Pam cooking spray and brown the tofu on both sides. I marinaded the tofu in soy/hot sauce for 2 minutes. I will be making this again very soon!
